Sautéed Zucchini and Carrots

This is super quick to throw together and the flavors of the shallots and basil really make this dish.
Servings: 6 to 8
Course: Side Dish

Ingredients
  

  • 1 lb. carrots peeled and thinly sliced
  • 2 Tablespoons butter
  • 2 shallots diced
  • 2 small zucchini thinly sliced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 Tablespoons minced fresh basil

Method
 

  1. In a large saucepan, melt the butter over medium heat.    
  2. Add the carrots and sauté for 4 minutes.
  3. Add shallots; cook for 1 minute.
  4. Add zucchini and next 3 ingredients; cover and cook 3-4 minutes.
