Chocolate-Oatmeal Parfaits
Plan Ahead Note: these need to chill for two hours.
Ingredients
Parfaits
- 2 cups milk
- ⅔ cup granulated sugar
- ⅓ cup unsweetened cocoa sifted
- 3 Tablespoons cornstarch
- ⅛ teaspoon salt
- 1 egg
- 4 oz. semi-sweet chocolate chopped
- 1 teaspoon vanilla extract
- 1 ½ cups Quick Oatmeal Granola (see below)
- 3 cups thawed whipped topping
Quick Oatmeal Granola
- ¼ cup honey
- 2 Tablespoons butter melted
- ½ teaspoon vanilla extract
- 1 ½ cups uncooked regular oats
- ½ cup flour
- ¼ teaspoon salt
Instructions
Parfaits
- Whisk together first five ingredients in a medium saucepan over medium high heat, and cook, whisking constantly, for five minutes.
- Gradually mix ⅓ cup of the hot milk mixture into the egg in a small bowl.
- Whisk egg mixture into remaining hot milk mixture. Cook whisking constantly for 3 minutes or until thickened.
- Remove from heat and add chopped chocolate, stirring until chocolate melts. Stir in vanilla.
- Pour mixture into a glass bowl. Place plastic wrap directly on top of warm mixture to keep a film from forming and chill two hours.
Quick Oatmeal Granola
- Preheat oven to 350°.
- Make granola by stirring together honey and next two ingredients in a small bowl.
- Stir together oats, flour, and salt in a large bowl.
- Add honey mixture to oatmeal mixture, stirring until combined. Spread oat mixture onto a lightly greased baking sheet.
- Bake at 350° for 20 minutes, stirring often.
- To make parfaits, layer 1 ½ Tablespoons granola, 3 Tablespoons chocolate mixture, and ¼ cup whipped topping into each of the parfait glasses. Repeat layers once and sprinkle the top of each parfait with 1 Tablespoon granola. Serve immediately.
