Treat Tuesday-Grandma’s Cobbler
I know, it is really Thursday. Yesterday my oldest son moved into college to begin his freshman year. Enough said. So while I made this on Tuesday per his request, I am just now getting to share it.
You can’t beat this cobbler! It is quick, it is easy, and it can compete against any cobbler recipe out there. My grandmother used to make this when we would visit her house and the smell coming from the oven as we were finishing dinner was divine! You can make this with any fruit, but the peaches are so ripe and juicy right now, making them the perfect fruit for this dish.
Basically all you need is fruit, sugar, bisquick (what a great staple!), and one egg.
Stir the topping with a fork, spread over the fruit. Dot the top with butter and cinnamon and bake until bubbly and crisp.
Scoop a nice warm portion into a bowl and top with vanilla ice cream.
