Chocolate Chip-Coffee Muffins

I was out of regular chocolate chips, so I substituted ¾ cup of mini chocolate chips…yum!  For the instant coffee, keep some of the individual packets of Starbucks instant coffees in your pantry; they work great for recipes like this.

Ingredients
  

  • cup milk
  • 5 Tablespoons butter melted
  • 3 Tablespoons instant coffee granules
  • 1 ½ teaspoons vanilla extract
  • 1 large egg
  • 2 cups all-purpose flour
  • cup granulated sugar
  • ½ cup semisweet chocolate chips
  • 2 teaspoons baking powder
  • ¼ teaspoon salt

Method
 

  1. Preheat oven to 400°.  
  2. Combine milk, butter, coffee, vanilla, and egg.
  3. Add flour, sugar, chocolate chips, baking powder, and salt.
  4. Stir just until all ingredients are moistened.
  5. Spray a 12 muffin cup baking pan with cooking spray.  Spoon batter into pan.  
  6. Bake at 400° for 15 minutes or until tester comes out clean. Remove from muffin pan and place on wire rack to cool.
