Hash Brown Casserole
This is an old favorite that I have been making for years. If you need a side dish that feeds a crowd (or starving boys), mix this up and throw it in the oven.Plan Ahead Note: the hash browns need to be thawed out slightly.
Ingredients
- 2 lbs. hash browns thawed
- 1 can cream of chicken soup
- 2 cups shredded cheddar cheese
- 2 cups sour cream
- 1 teaspoon salt
- ¼ teaspoon pepper
- ½ cup butter melted
Topping
- 2 cups cornflake cereal
- ¼ cup butter melted
Instructions
- Preheat oven to 400°.
- Mix hash browns, soup, cheese, sour cream, salt, pepper, and ½ cup melted butter in a large bowl. Pour into a 13" x 9" pan.
Topping
- Combine cornflake cereal and remaining melted butter. Pour over casserole.
- Bake at 400° for one hour. Let cool 5 minutes before serving.
