Cranberry Cobbler

I have been making this recipe for years as it is a great compliment to the Enchiladas I make on Christmas Eve.  Pop this into the oven right before you sit down for dinner and it will be nice and warm when you are ready for dessert.

Ingredients
  

  • 4 cups Granny Smith apples washed, peeled, and chopped
  • 2 cups fresh cranberries rinsed
  • 1 ½ teaspoons fresh lemon juice
  • 1 cup granulated sugar
  • 1 ½ cups quick-cooking oats
  • cup light brown sugar firmly packed
  • ½ cup butter melted
  • vanilla ice cream

Method
 

  1. Preheat oven to 325°.
  2. Place apples and cranberries in an 11" x 7" baking dish.      
  3. Pour lemon juice and then sugar over fruit.
  4. Combine oats, brown sugar, and butter until crumbs form.  Spread over fruit mixture.
  5. Bake at 325° for 1 hour or until browned and bubbly.  Let rest for 5 minutes and serve with vanilla ice cream.
