Chicken Caesar Salad
This recipe is a much lighter version of a traditional Caesar Salad but packed with flavor. Use the freshest ingredients and toss in an extra large bowl to coat all the pieces well.
Ingredients
- 2 Tablespoons olive oil
- 2 cloves garlic minced
- 4 cups cubed French bread
- 2 Tablespoons lemon juice
- 2 Tablespoons red wine vinegar
- 2 Tablespoons water
- ½ teaspoon Dijon mustard
- 2 egg yolks
- 1 head romaine lettuce rinsed and chopped
- 4 chicken breasts grilled and chopped
- ½ cup grated Parmesan cheese
- salt
- pepper
Instructions
- Heat oil in a small saucepan over medium heat. Add garlic and stir for 30 seconds. Remove from heat. Strain olive oil and toss remaining garlic.
- Cube bread and place on a silicone mat on a cookie sheet. Drizzle olive oil over bread and toss with your hands coating all pieces.
- Broil in the one for 2 minutes or until light brown. Turn oven off, but leave pan in oven.
- Add lemon juice, vinegar, mustard, and egg yolks in a bowl and mix well.
- Pour into a saucepan over medium heat and stir just until thickened.
- Toss chopped chicken, lettuce, and dressing in a bowl.
- Add cheese, bread cubes, salt, and pepper, mixing well.
