Chicken Caesar Salad

This recipe is a much lighter version of a traditional Caesar Salad but packed with flavor.  Use the freshest ingredients and toss in an extra large bowl to coat all the pieces well.

Ingredients
  

  • 2 Tablespoons olive oil
  • 2 cloves garlic minced
  • 4 cups cubed French bread
  • 2 Tablespoons lemon juice
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons water
  • ½ teaspoon Dijon mustard
  • 2 egg yolks
  • 1 head romaine lettuce rinsed and chopped
  • 4 chicken breasts grilled and chopped
  • ½ cup grated Parmesan cheese
  • salt
  • pepper

Method
 

  1. Heat oil in a small saucepan over medium heat.  Add garlic and stir for 30 seconds.  Remove from heat.  Strain olive oil and toss remaining garlic.
  2. Cube bread and place on a silicone mat on a cookie sheet.  Drizzle olive oil over bread and toss with your hands coating all pieces.
  3. Broil in the one for 2 minutes or until light brown.  Turn oven off, but leave pan in oven.
  4. Add lemon juice, vinegar, mustard, and egg yolks in a bowl and mix well.
  5.  Pour into a saucepan over medium heat and stir just until thickened.  
  6. Toss chopped chicken, lettuce, and dressing in a bowl.
  7.  Add cheese, bread cubes, salt, and pepper, mixing well.
