Massaged Kale Salad

Massaged Kale SaladThis recipe is adapted from Aarti Sequeira of the Food Network.

Ingredients:

1 bunch Kale, stalks removed and discarded, leaves thinly sliced
1 lemon, juiced
1/4 cup extra virgin oil oil, plus extra for drizzling
Kosher salt
2 teaspoons honey
Freshly ground black pepper
1 can mandarin oranges, drained
2 Tablespoons mixed seeds and nuts (pumpkin, sunflower, thinly sliced almonds)

In a large serving bowl, combine the kale, juice of half the lemon, a drizzle of olive oil and a little kosher salt.  Massage the kale with your hand until it starts to soften and wilt, about 3 minutes.  Set aside.  In a small bowl, whisk the juice from the other half of lemon, honey, and lots of freshly ground black pepper.  Stream in the 1/4 cup olive oil while whisking until a dressing forms.  Pour the dressing over the kale and add oranges and seed/nut mixture.  Toss and serve.
