Not only are these beans great with Thanksgiving, they make a wonderful leftover. Make these 30 minutes before the turkey is done.
2 lb. fresh green beans, rinsed and ends snapped off
8 bacon slices
2 cups shiitake mushroom slices
2 shallots, sliced
1/4 teaspoon crushed red pepper flakes
Place beans in boiling water. Reduce heat to medium and cook for 4 minutes or until beans are bright green. Plunge into cold water, which stops the cooking, and then drain.
Cook bacon in a large skillet; crumble. Add the mushrooms and shallots to the bacon drippings and cook over medium heat for 5 minutes or until shallots are translucent. Add the green beans, crushed red pepper and bacon. Salt and pepper to taste.
