Chocolate Kiss Cookies

My  mom made these for our family every Christmas.  We would come home from school and the glass tree cookie jar would be filled with these powdered sugar wonders!

1 cup butter, softened to room temperature
1/2 cup powdered sugar, sifted
1 teaspoon vanilla
1/4 teaspoon salt
1 3/4 cup flour
1 teaspoon cinnamon
1 package (9oz.) chocolate candy kisses
Powdered sugar

Cream butter until light and fluffy.  Add 1/2 cup powdered sugar and mix well.  Add flour and cinnamon gradually mixing with a spatula until well blended.  Chill dough for one hour.  Mold 1 Tablespoon cookie dough around each chocolate kiss, covering kiss completely.  Bake on ungreased cookie sheet at 375 degrees until cookies just turn golden around the edges, about 15-18 minutes.  Let cool for 5 minutes on the cookie sheet then remove to wire rack and roll in powdered sugar while warm.  When completely cool, roll in powdered sugar again.

Yield: 2 dozen cookies
