Peanut Butter Chocolate Cookies

Peanut butter chocolate cookiesThese cookies are a great after school snack.  If you don’t have time to use a pastry bag to pipe the frosting, grab a spoon and drizzle over each cookie.  Place wax paper under your cookie rack and clean up will be a snap.


1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
1/4 cup creamy peanut butter
2 Tablespoons butter, softened
1/4 cup milk
2 eggs
1/2 teaspoon vanilla

Combine sugar, peanut butter, and butter in a large bowl.  Mix with an electric mixer for 2 minutes.  Add milk.  Mix well.  Add eggs and vanilla, beat well.  Add flour, baking powder, and salt, mixing until well blended.  Drop dough by teaspoonfuls onto a silicone mat on a cookie sheet.  Bake at 375 degrees for 11 minutes.  Let stand on pan for one minute, then remove to wire rack to cool.  Frost with peanut butter icing and chocolate icing.

Peanut Butter Icing:

3/4 cup powdered sugar
2 Tablespoons milk
1 Tablespoon whipping cream
3 Tablespoons peanut butter

Whisk and place in pastry bag to pipe on cookies

Chocolate Icing:

1/4 cup semi-sweet chocolate chips
3/4 cup powdered sugar
1 1/2 Tablespoons milk
1 Tablespoon whipping cream
1 teaspoon unsweetened cocoa, sifted

Melt chocolate chips over low heat.  Whisk in remaining ingredients, place in pastry bag to pipe on cookies.
