Slow-Simmered Meat Sauce

This recipe works best if you make it the night before you want to serve it, the flavors intensify for a nice, rich sauce.

Ingredients
  

  • 1 Tablespoon olive oil
  • 2 cups chopped onion
  • 1 cup chopped carrot
  • 3 cloves garlic minced
  • 1 pkg. hot Italian Turkey sausage
  • 1 lb. ground sirloin
  • ¼ cup tomato paste
  • 1 ½ teaspoons sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon crushed red pepper
  • 1 28oz. can crushed tomatoes undrained
  • 1 cup tomato sauce
  • 1 Tablespoon chopped fresh oregano
  • 16 oz. large flat noodle pasta cooked according to package directions
  • ½ cup chopped fresh basil
  • 3 oz. grated Parmesan cheese

Instructions
 

  • Heat a large skillet over medium high heat.  Add oil to pan;  swirl to coat.              
  • Add onion and carrot to pan;  sauté 4 minutes, stirring occasionally.
  • Add garlic;  sauté 1 minute, stirring constantly.
  • Place vegetable mixture in a slow cooker.
  • Add sausage (with casings removed) and beef to skillet;  sauté 6 minutes or until browned, stirring to crumble.
  • Drain beef mixture from skillet and add to slow cooker.
  • Add in tomato paste, sugar, salt, red pepper, crushed tomatoes and tomato sauce.
  • Cover and cook on LOW 8 hours.
  • Stir in oregano.
  • Cool and refrigerate overnight.  Reheat on the stove and serve over cooked pasta, topped with basil and parmesan.
