Molasses-Spice Crackles

These cookies have just the right amount of crunch on the outside and they are nice and soft on the inside.  The dough is made in the food processor so it comes together quickly.
Plan Ahead Note: the butter needs to be softened to room temperature.

Ingredients
  

  • 1 ⅓ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ½ cup light brown sugar firmly packed
  • ¼ cup butter softened
  • 2 Tablespoons molasses
  • 1 large egg white
  • ¼ cup granulated sugar

Instructions
 

  • Combine flour, baking soda, spices, and salt in a bowl and stir well.  Set aside.              
  • Place brown sugar, butter, molasses, and egg white in a food processor, and process until blended.
  • Add dry ingredients to food processor, and process until blended, scraping sides of processor bowl once.
  • Gently press mixture into a ball, wrap in plastic wrap.  Chill 2 hours.
  • Preheat oven to 375°.
  • Shape dough into ¾" balls.
  • Place granulated sugar in a bowl.
  • Dip balls in cold water, shake to remove excess moisture.  Roll wet balls in sugar.  Place 3" apart on a baking sheet covered with parchment paper.
  • Bake at 375° for 10 minutes.  Let cool on pan for 3 minutes and move to wire rack to cool completely.
