Slow Cooker Barbecued Chicken

This recipe is the best way to cook a whole chicken in the slow cooker!  I used Dr. Pepper instead of cola and whiskey instead of bourbon because that is what I had in my cupboard.

Ingredients
  

  • 2 teaspoons salt
  • 1 ½ teaspoons paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon freshly ground black pepper
  • 1 3-4 lb. cut-up whole chicken
  • ½ cup cola
  • cup ketchup
  • ¼ cup light brown sugar firrmly packed
  • 2 Tablespoons apple cider vinegar
  • 2 Tablespoons bourbon
  • 1 lemon sliced

Instructions
 

  • Nest chicken parts into slow cooker.  Stir together first four ingredients in a small bowl.  Sprinkle evenly over chicken.
  • Whisk together cola soft drink and next 4 ingredients in a small bowl.  Slowly pour between chicken pieces (to avoid removing spices from chicken.)  Place lemon slices in a single layer on top of chicken.
  • Cover and cook on HIGH 5 hours (or on low 6 ½ to 7 ½ hours) or until done.
  • Transfer chicken pieces to a serving platter, discard lemon slices.  Skim the fat off the sauces in the slow-cooker and discard.  Pour pan juices over chicken and serve.
