Avocado Cilantro Grilled Steak

This is perfect for summer.  It is quick to make and cooking the steak on the grill keeps the kitchen from heating up. Grab a bag of mini potatoes to throw in a grill basket next to the steak. Drizzle with some olive oil and your favorite seasoning and place on the grill.

Ingredients
  

  • 2 lb. Top Round Steak
  • 1 lime halved
  • 2 cloves garlic minced
  • 2 Tablespoons ground cumin
  • 1 teaspoon crushed red pepper
  • 1 teaspoon salt

Avocado Cilantro Salsa

  • 2 ripe avocados cubed
  • 1 cup salsa verde
  • 3 Tablespoons chopped cilantro

Instructions
 

  • Put steak in a baking dish.  Squeeze half of lime over one side as well as one minced garlic clove.        
  • In a small bowl combine, cumin, pepper, and salt.
  • Rub half of the spice mixture over one side.  Flip steaks and squeeze the other half of lime over the steak. Add the remaining garlic and rub the spices onto the meat.
  • Grill steak over medium heat for 6-8 minutes a side for medium rare.
  • Remove steak from grill and let rest 5 minutes before slicing.

Avocado Cilantro Salsa

  • In a medium bowl, mix avocado, salsa, and cilantro.  Serve over steak slices.
