Zucchini Bread

This is moist and cinnamony.  Perfect recipe to make one for a gift and one for yourself!

Ingredients
  

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 3 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 teaspoons vanilla extract
  • 1 cup canola oil
  • 3 eggs
  • 3 cups shredded zucchini drained on paper towels

Instructions
 

  • Preheat oven to 350°.    
  • Grease and flour two 9" x 5" x 3" loaf pans.
  • In a large mixing bowl, combine all ingredients and blend well.
  • Divide batter into the two pans and smooth the top with a spatula.
  • Bake at 350° for 1 hour or until a wooden pick inserted into the center comes out with a few moist crumbs.
