Slow Cooker Meatloaf on a Bed of Potatoes

You can lightly mash the potatoes and the sauce is slightly sweet, making it very kid friendly.  Use two large spatulas to lift the meatloaf onto a cutting board to slice it.  Add a side salad or steamed green beans to complete the meal.  This meatloaf also works well for sandwiches the next day.

Ingredients
  

Meatloaf
  • 2 Tablespoons olive oil
  • 3 large russet potatoes peeled and cut into 1" cubes
  • 2 lbs. ground sirloin
  • 2 eggs lightly beaten
  • ¾ cup crushed saltine crackers
  • ¾ cup ketchup
  • 1 teaspoon salt
  • freshly ground black pepper
Topping
  • ¾ cup ketchup
  • cup light brown sugar firmly packed
  • 1 teaspoon Dijon mustard

Method
 

  1. Grease the bottom of the slow cooker with olive oil.  Add the potatoes, toss lightly to coat and arrange in a neat bed.     Shape the mixture into an oval or round loaf , and place on top of the layer of potatoes.    
  2. Combine the ground beef, eggs, crumbs, ketchup, salt, and pepper in a large bowl.
  3. Using a large fork, mix gently but thoroughly, being careful not to compact the meat.
  4. Shape the mixture into an oval or round loaf , and place on top of the layer of potatoes.
  5. To make the topping, combine the ingredients in a small bowl and pour over the meatloaf.
  6. Cook on low for 8 hours.
  7. Remove meatloaf and let rest for 10 minutes before slicing. Serve with potatoes mashed from the slow cooker.
