Applesauce Bread

The use of applesauce in this recipe makes the bread so moist and it is a perfect addition for your Thanksgiving morning table. I use the natural version of applesauce.

Ingredients:

1 cup quick cooking oats
1 2/3 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup baking powder
1/2 cup butter, softened
3/4 cup sugar
2 eggs
1 cup applesauce
1 teaspoon sugar
1/4 teaspoon cinnamon

Lightly grease a 9″ x 5″ x 3″ loaf pan.
In mixing bowl stir together the oats, flour, soda, cinnamon, salt, and baking powder.
In another mixing bowl, cream butter and 3/4 cup sugar until light and fluffy. Add eggs and beat well. Add oat mixture and applesauce alternately with the creamed mixture, beating until smooth after each addition.
Pour batter into prepared pan. Combine sugar and cinnamon and sprinkle on top of batter.
Bake at 350 degrees for 45 minutes or until wooden pick inserted into the center comes out clean. Cool in pan for 10 minutes. Remove from pan and cool completely on a wire rack.

Yield: 12 slices
