Chocolate-Chip Pumpkin Muffins

These are super easy to make and the combination of pumpkin spice and chocolate chips create the perfect muffin!

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 2 teaspoons pumpkin pie spice
  • 2 large eggs
  • 1 cup canned pumpkin
  • ½ cup packed dark brown sugar
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter melted
  • ½ cup granulated sugar
  • 2 cups semisweet chocolate chips

Method
 

  1. Preheat oven to 350°.
  2. In a large bowl, mix together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. Make a well in the center of the flour mixture and add in the eggs, pumpkin, brown sugar, vanilla, melted butter, and granulated sugar. Stir to combine.
  4. Stir in 1 ½ cups chocolate chips.
  5. Line a muffin tray with liners and spoon batter in, filling about ¾ full.
  6. Sprinkle with remaining ½ cup chocolate chips.
  7. Bake for 20-24 minutes or until a wooden pick inserted into the center comes out clean.
  8. Let muffins cool in pan for 5 minutes.
  9. Remove muffins to a wire rack. Serve warm or let cool completely. Store in an airtight container.
