Baked Chicken Fingers

This is a healthier alternative to traditional chicken fingers.  If your butcher counter has chicken tenders, grab those to make this recipe even easier. Serve with Chick-fil-A sauce if you are lucky enough to have some in your fridge or ranch dressing for dipping.

Ingredients
  

  • 2 6oz. pkg. chow mein noodles
  • 1 cup buttermilk
  • 2 teaspoons soy sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon pepper
  • 6 chicken breasts cut into strips or 2.5 lbs. chicken tenders

Method
 

  1. Preheat the oven to 350°.          
  2. Place noodles in a food processor and blend until they are fine crumbs.
  3. Place in a pie plate.
  4. Whisk buttermilk, soy sauce, and spices in another pie plate.
  5. Dip each chicken strip into buttermilk and then crumb mixture.
  6. Place on a wire rack coated with cooking spray on a cookie sheet and bake at 350° for 18 minutes.
  7. Turn the strips and bake for an additional 15 minutes.
