Yellow Cupcakes

Cupcakes
- ⅓ cup butter softened
- 3 Tablespoons shortening
- 1 cup sugar
- 2 eggs
- 1 ¾ cup all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk
- 1 teaspoon vanilla extract
Frosting
- ½ cup semi-sweet chocolate chips
- ¼ cup milk
- ¼ cup+2 Tablespoons butter
- 1 ¼ cups sifted powdered sugar
Cupcakes
Preheat oven to 350°.
Cream butter and shortening in an electric mixer.
Add sugar and beat until light and fluffy.
Add eggs one at a time until well blended.
Combine flour, baking soda, and salt in a small bowl. Add to butter mixture alternately with buttermilk. Stir in vanilla.
Spoon batter into muffin tin lined with paper muffin cups.
Bake at 350° for 20-25 minutes. Once completely cool, frost with Chocolate Frosting.
Frosting
Combine chocolate chips, milk, and butter in a saucepan over low heat, stirring until the chocolate is melted.
Remove from heat and add vanilla and powdered sugar beating well with a hand mixer.
Set saucepan on ice and beat until frosting holds it's shape and loses it's gloss. Add a little more milk to make the frosting spreadable.
