Snowball Cookies

This recipe screams holiday time!  Another favorite from my childhood that would always be in our Christmas cookie jar during the month of December.
Plan Ahead Note: the butter needs to be softened to room temperature and the dough needs to be refrigerated for one hour.

Ingredients
  

  • 1 cup butter softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • pinch of salt

Instructions
 

  • Preheat oven to 375°.
  • Cream butter, sugar, and vanilla at medium speed of an electric mixer.      
  • Add flour and salt until combined.
  • Chill dough for one hour.
  • Roll into balls and place on ungreased cookie sheet.
  • Bake at 375° for 10-12 minutes.
  • Roll in powdered sugar twice, let cool.  Roll once more.
