Snowball Cookies

This recipe screams holiday time!  Another favorite from my childhood that would always be in our Christmas cookie jar during the month of December.
Plan Ahead Note: the butter needs to be softened to room temperature and the dough needs to be refrigerated for one hour.
Servings: 2 dozen cookies
Course: Christmas

Ingredients
  

  • 1 cup butter softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • pinch of salt

Method
 

  1. Preheat oven to 375°.
  2. Cream butter, sugar, and vanilla at medium speed of an electric mixer.      
  3. Add flour and salt until combined.
  4. Chill dough for one hour.
  5. Roll into balls and place on ungreased cookie sheet.
  6. Bake at 375° for 10-12 minutes.
  7. Roll in powdered sugar twice, let cool.  Roll once more.
