Slow Cooker Beef Brisket Tacos
This is a great weeknight recipe. Throw all the ingredients in the slow cooker first thing in the morning, and by dinner time, the brisket will be fork tender.
- 2 onions sliced
- 2 celery stalks sliced
- 2 garlic cloves minced
- 3 lb. beef brisket
- 2 teaspoons salt
- 1 ½ teaspoons ground chipotle chili powder
- 1 cup chopped cilantro
Place onions, celery, and garlic in slow cooker.
Rub brisket with salt and chipotle powder and place on top of vegetables in slow cooker. Top with cilantro.
Cook on low for 8-9 hours.
Remove brisket and shred meat with two forks.
Place in tortillas, top with shredded cheese and salsa.
