Vanilla-Buttermilk Tarts

This is a quick and mini version of a buttermilk pie.
Plan Ahead Note: the custard needs to chill for 4 hours or overnight.

Cook Time 8 minutes
Servings: 8 tarts

Ingredients
  

  • cup granulated sugar
  • ¼ cup all-purpose flour
  • 1 ½ cups buttermilk
  • 3 large eggs
  • 1 Tablespoon vanilla extract
  • 1 8 0r 10 oz. pkg. frozen tart shells

Method
 

  1. Whisk together sugar and flour in a 3 quart heavy saucepan;  add buttermilk and eggs, and whisk until blended.    
  2. Cook over medium heat, whisking constantly, 7 to 8 minutes or until a pudding-like thickness.
  3.  Remove from heat, and stir in vanilla.  
  4. Cover with plastic wrap, allowing it to fully touch the custard and chill 4 to 24 hours.
  5. Bake frozen tart shells according to package directions, and cool completely (about 30 minutes).  
  6. Spoon custard into tart shells, and top with desired toppings just before serving.
