Turkey Cutlets in White Wine Sauce

This recipe can be made with Turkey, Chicken, or Pork cutlets.  Make sure your package says, "cutlets" because you need a very thin piece of meat to ensure these cook all the way through.  My family insists the best way to eat these are with some mashed potatoes!

Ingredients
  

  • 4 Tablespoons olive oil
  • 8 5 oz. turkey cutlets
  • 1 teaspoon freshly ground black pepper
  • ½ cup all-purpose flour
  • 1 cup chicken broth
  • 1 cup dry white wine
  • 5 Tablespoons butter

Method
 

  1. Preheat oven to 400°.
  2. Season the turkey cutlets with salt and pepper
  3. Place flour in a pie pan and dredge the cutlets on both sides with flour.
  4. Heat the olive oil at medium heat in a large skillet.  Add the cutlets and brown for 3 minutes.  Flip the cutlets and brown for an additional 3 minutes.  Remove from pan and place on a baking sheet and place in a 400° oven for 8 minutes.
  5. Add the chicken broth and wine back into the frying pan over medium heat, whisking for 5 minutes.
  6.  Continue whisking while adding butter, salt, and pepper.  Spoon over cutlets.
