Preheat oven to 400°.
Season the turkey cutlets with salt and pepper
Place flour in a pie pan and dredge the cutlets on both sides with flour.
Heat the olive oil at medium heat in a large skillet. Add the cutlets and brown for 3 minutes. Flip the cutlets and brown for an additional 3 minutes. Remove from pan and place on a baking sheet and place in a 400° oven for 8 minutes.
Add the chicken broth and wine back into the frying pan over medium heat, whisking for 5 minutes.
Continue whisking while adding butter, salt, and pepper. Spoon over cutlets.
