Sriracha Deviled Eggs

These eggs have a nice amount of spice with the Sriracha sauce and they look beautiful on an egg tray for a party.  
Plan Ahead Note:  The eggs need to be hard boiled in advance. An easy way to hard boil the eggs:  Using a double boiler with a steamer basket, heat the water to boiling in a large saucepan, add eggs to the steamer and place over the boiling water.  Cover and let steam over the boiling water for 15 minutes.  Remove and immerse in ice water.  The egg shells will peel off in a snap.

Ingredients
  

  • 6 hard boiled eggs
  • ½ cup mayonnaise
  • 1 Tablespoon Dijon mustard
  • 1 teaspoon pickle juice
  • salt
  • pepper
  • 1 teaspoon Sriracha sauce
  • 1 teaspoon onion powder
  • paprika

Method
 

  1. Slice the eggs in half and place the yolks into a medium sized bowl.      
  2. Mash with a fork and add mayonnaise, mustard, pickle juice, a dash of salt & pepper, Sriracha sauce, and onion powder. Mix well.
  3. Lay the egg whites on a serving platter and fill with the yolk mixture.  Lightly sprinkle paprika on top.
