Slow Cooker Shredded Beef Sandwiches

The sauce drizzled over the sandwiches make this recipe super delicious. A slice of cheese, pickles, and/or caramelized onions also taste great with this beef.

Ingredients
  

  • 3 lb eye of round roast
  • 1 14oz. can chopped tomatoes
  • 1 cup spicy salsa
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 Tablespoons New Mexico Chile Powder
  • 1 Tablespoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 2 cups beef broth

Method
 

  1. Place beef in slow cooker.      
  2. Combine the rest of the ingredients and pour over the beef.
  3. Cook on low for 9 hours.
  4. Shred beef and place on buns or rolls and top with some of the sauce from the slow cooker.
