Pumpkin Pancakes

These are the perfectly plump addition to any breakfast with just the right amount of pumpkin and spice flavors!

Servings: 12 -15 pancakes

Ingredients
  

  • 3 cups all-purpose flour
  • 3 Tablespoons granulated sugar
  • 2 Tablespoons baking powder
  • 1 teaspoon salt
  • 2 cups canned pumpkin puree
  • 2 eggs
  • 3 teaspoons vanila extract
  • ¼ teaspoon pumpkin pie spice
  • 2 ¾ cups milk
  • warm maple syrup

Method
 

  1. Combine the flour, sugar, baking powder, and salt in a bowl and stir together.
  2. In a separate bowl, combine the pumpkin puree, eggs, vanilla, pumpkin pie spice, and milk. Whisk until combined.
  3. Pour the wet ingredients into the dry ingredients and stir just until they come together.
  4. Heat a griddle or nonstick skillet over medium heat and carefully pour batter in small circles in the pan.
  5. Once bubbles start to form on the surface, flip the pancake and cook for a couple of minutes until done in the center.
  6. Serve with warm maple syrup.
