Method
- Combine the flour, sugar, baking powder, and salt in a bowl and stir together.
- In a separate bowl, combine the pumpkin puree, eggs, vanilla, pumpkin pie spice, and milk. Whisk until combined.
- Pour the wet ingredients into the dry ingredients and stir just until they come together.
- Heat a griddle or nonstick skillet over medium heat and carefully pour batter in small circles in the pan.
- Once bubbles start to form on the surface, flip the pancake and cook for a couple of minutes until done in the center.
- Serve with warm maple syrup.
