Peanut Butter Cup Brownies

This combines two great desserts, brownies and peanut butter cups! They are wonderfully fudgey!!!
Prep Time 20 minutes
Cook Time 30 minutes
Servings: 20 -24 Brownies
Course: Dessert

Ingredients
  

  • 1 cup unsalted butter
  • 8 oz. bittersweet chocolate squares
  • 4 eggs
  • 3 cups sugar
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • salt
  • 8 large peanut butter cups roughly chopped

Method
 

  1. Preheat oven to 400°.
  2. In a double boiler over medium heat add the chocolate broken into pieces and the butter.  Stir until melted and remove from heat to cool slightly.     
  3.  In a medium bowl, combine the eggs and sugar and beat until light and fluffy.
  4.  Add the cooled chocolate and vanilla.
  5. Mix in the flour and a dash of salt.
  6. Gently stir in chopped peanut butter cups.
  7.  Scrape the batter into a 9" x 13" baking dish that has been buttered.
  8. Bake at 400° for 30-35 minutes or until a wooden pick inserted into the center of the pan comes out clean.
  9. Cool completely and cut into squares.
