Method
- Preheat the oven to 350°.
- Butter and flour an 8" square baking dish.
- Dice unpeeled apples and toss them with sugar and cinnamon. Set aside.
- Whisk together the flours, baking powder, and salt for the batter and set aside.
- In a stand mixer with a paddle attachment, cream together the butter and sugar for the batter until combined.
- Add eggs one at a time and vanilla gradually, scraping down the bowl periodically.
- Mix in half the dry ingredients until incorporated, then mix in the rest thoroughly.
- Press half the dough into the bottom of the baking dish.
- Spread the apples evenly over the dough, making sure to add only a single layer of apples so the cake will cook through.
- Evenly press the rest of the dough on top of the apples.
- Sprinkle the top of the cake with sugar.
- Bake at 350° for 45 to 50 minutes or until the cake is a deep golden brown, to ensure it is thoroughly baked through and has developed a deep, rich flavor.
- Let the cake cool, then cover and refrigerate overnight.
- Trim the edges (which make great snacks!) and cut into 2" squares.
