Oma's Apple Cake

A great, dense cake that is best served cold, this Apple Cake fills your kitchen with the scent of cinnamon!
PLAN AHEAD NOTE: The butter and the eggs need to be brought to room temperature

Ingredients
  

Apple Filling
  • 2 large Honeycrisp Apples
  • ¼ cup granulated sugar
  • 1 ½ teaspoon cinnamon
Batter
  • 4 ¾ cups all-purpose flour
  • ½ cup rye flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 ¾ cups butter at room temperature
  • 2 ½ cups granulated sugar
  • 3 eggs at room temperature
  • 1 Tablespoon vanilla

Method
 

  1. Preheat the oven to 350°.
  2. Butter and flour an 8" square baking dish.
  3. Dice unpeeled apples and toss them with sugar and cinnamon. Set aside.
  4. Whisk together the flours, baking powder, and salt for the batter and set aside.
  5. In a stand mixer with a paddle attachment, cream together the butter and sugar for the batter until combined.
  6. Add eggs one at a time and vanilla gradually, scraping down the bowl periodically.
  7. Mix in half the dry ingredients until incorporated, then mix in the rest thoroughly.
  8. Press half the dough into the bottom of the baking dish.
  9. Spread the apples evenly over the dough, making sure to add only a single layer of apples so the cake will cook through.
  10. Evenly press the rest of the dough on top of the apples.
  11. Sprinkle the top of the cake with sugar.
  12. Bake at 350° for 45 to 50 minutes or until the cake is a deep golden brown, to ensure it is thoroughly baked through and has developed a deep, rich flavor.
  13. Let the cake cool, then cover and refrigerate overnight.
  14. Trim the edges (which make great snacks!) and cut into 2" squares.
