Mocha Coffee Bars

These make the perfect afternoon snack!
Servings: 24 bars
Course: Dessert

Ingredients
  

  • 3 eggs
  • 1 ½ cups granulated sugar
  • 2 teaspoons vanilla extract
  • ¾ cup unsalted butter melted
  • 2 cups all-purpose flour
  • ½ teaspoon kosher salt
  • 3 Tablespoons espresso powder
  • ¼ cup heavy cream
  • 1 ½ cups mini chocolate chips

Method
 

  1. Preheat the oven to 325°.
  2. Lightly grease a 9" x 13" pan.
  3. In a large mixing bowl, beat the eggs until light-colored and thick.
  4. Add the sugar, beating until glossy and stiff.
  5. Add the vanilla and melted butter, beating to combine.
  6. Stir in the flour and salt.
  7. Set aside 1 ½ cups of the batter.
  8. Stir together the espresso and the cream and add to the remaining batter.
  9. Spread the coffee batter in the prepared pan.
  10. Spoon the reserved batter over the top, then run a knife through the two batters to marble them.
  11. Bake the bars for 30 minutes, or until the sides just barely pull away from the edge of the pan and the center is set.
  12. Remove them from the oven and sprinkle the chocolate chips over the top. Let cool completely before cutting.
