Mini Key Lime Tarts

This recipe is adapted from Fitness Magazine. I have to admit, I did not make it "fit" since I used regular sweetened condensed milk instead of fat free. My kids requested using mini graham cracker tarts versus phyllo dough next time. I think I would like both.
Plan Ahead Note: the filling needs to chill for at least 2 hours.
Servings: 24 tarts

Ingredients
  

  • 1 14 oz. can sweetened condensed milk
  • ½ teaspoon freshly grated key lime zest
  • ½ cup key lime juice about 10 key limes
  • 24 prefaced miniature phyllo dough shells
  • whipped cream

Method
 

  1. In a small bowl, whisk together sweetened condensed milk, lime zest, and lime juice.   
  2. Cover and chill about two hours or until mixture is slightly thickened.
  3. Spoon about 1 Tablespoon of chilled filling into each phyllo dough shell and top with whipped cream when serving.
