Method
- Preheat the oven to 350°.
- Thoroughly grease a 9" x 11" baking dish with two teaspoons butter.
- In a small saucepan, melt the remaining ½ cup butter over low heat. Remove the pan from the heat and set aside.
- In a medium bowl, mix together the blueberries, granulated sugar, lemon zest, and cornstarch.
- Add the lemon juice, stirring gently to combine well.
- Pour the blueberries into the prepared baking dish and set aside.
- In a medium bowl, stir together the rolled oats, brown sugar, oat flour, and salt.
- Pour in the melted butter and stir to combine. Spoon the mixture evenly over the blueberries.
- Bake until bubbling, 25-30 minutes.
- Remove from the oven and let cool for 10 minutes.
- It's delicious warm or at room temperature. You can even add ice cream! Do not refrigerate.
