Gluten-Free Blueberry Crumble

If you are headed to a dinner and you don't know everyones dietary restrictions, this is a great option for dessert!

Ingredients
  

  • ½ cup unsalted butter
  • 4 cups fresh blueberries
  • ¼ cup + 2 Tablespoons granulated sugar
  • 2 Tablespoons grated lemon zest
  • 2 Tablespoons cornstarch
  • 1 Tablespoon fresh lemon juice
  • 1 cup old-fashioned rolled oats
  • ¾ cup brown sugar packed
  • ½ cup oat flour
  • ½ teaspoon kosher salt

Method
 

  1. Preheat the oven to 350°.
  2. Thoroughly grease a 9" x 11" baking dish with two teaspoons butter.
  3. In a small saucepan, melt the remaining ½ cup butter over low heat. Remove the pan from the heat and set aside.
  4. In a medium bowl, mix together the blueberries, granulated sugar, lemon zest, and cornstarch.
  5. Add the lemon juice, stirring gently to combine well.
  6. Pour the blueberries into the prepared baking dish and set aside.
  7. In a medium bowl, stir together the rolled oats, brown sugar, oat flour, and salt.
  8. Pour in the melted butter and stir to combine. Spoon the mixture evenly over the blueberries.
  9. Bake until bubbling, 25-30 minutes.
  10. Remove from the oven and let cool for 10 minutes.
  11. It's delicious warm or at room temperature. You can even add ice cream! Do not refrigerate.
