Chocolate Mocha Cookies

The most amazing cookie you will ever put in your mouth!
Plan Ahead Note: bring the butter and eggs to room temperature.
Servings: 2.5 dozen cookies
Course: Dessert

Ingredients
  

Cookies
  • 2 ¼ cups all-purpose flour
  • cup unsweetened cocoa sifted
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup butter softened to room temperature
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs at room temperature
  • 1 11.5 oz. pkg. semi-sweet chocolate chips
Frosting
  • ¼ cup unsweetened cocoa
  • ¼ cup hot, strong, brewed coffee
  • ¼ cup butter melted
  • 1 teaspoon vanilla extract
  • 3 ½ cups powdered sugar sifted

Method
 

Cookies
  1. Preheat oven to 350°.
  2. Combine flour and next 3 ingredients in a bowl.           
  3. Beat butter and next 3 ingredients at medium speed of an electric mixer until creamy.
  4. Add eggs one at a time, beating just until blended after each addition.
  5. Gradually add flour mixture, beating at low speed until blended.
  6. Stir in chocolate chips.
  7. Drop dough by teaspoons full onto a cookie sheet lined with a silicone mat.
  8. Bake at 350° for 11 minutes or until puffy.
  9. Cool on baking sheet for 2 minutes.  Remove to wire rack and cool completely.
Frosting
  1. To make the frosting, stir cocoa through powdered sugar together until creamy and slightly stiff.  Frost cookies.
