Chocolate, Chocolate Chip Muffins with Cream Cheese Frosting

These lasted two days in our home...there are only four of us...and they were completely gone! The cream cheese frosting is baked into the muffin, making these a decadent treat.
Plan Ahead Note: The cream cheese needs to be softened to room temperature.

Ingredients
  

  • 1 ¼ cups all-purpose flour
  • ¾ cup granulated sugar
  • cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • cup buttermilk
  • ¼ cup canola oil
  • ¼ cup butter melted and cooled
  • 1 egg
  • 1 teaspoon vanilla
  • ½ cup semisweet chocolate chips
  • 6 oz. cream cheese softened
  • ¼ cup sugar
  • ¼ cup granulated sugar
  • 1 egg
  • ¼ teaspoon vanilla extract

Method
 

  1. Preheat oven to 375°.  
  2. Grease 12 muffin cups.
  3. In a large bowl, mix flour, sugar, cocoa, baking soda, and salt.
  4. In another bowl, mix buttermilk, oil, butter, egg, and vanilla.
  5. Add liquid ingredients to dry ingredients and stir just until mixed.
  6.  Add chocolate chips.
  7. Spoon batter into muffin cups.
  8. In a medium bowl, mix cream cheese, sugar, egg, and vanilla.
  9. Spoon cream cheese mixture on top of the chocolate batter.
  10. Bake at 375° for 20 minutes or until tester comes out clean.  Cool in pan for 5 minutes and then remove muffins to wire rack.
