Chocolate Chess Squares

Ingredients
  

Crust
  • 1 cup all-purpose flour
  • cup powdered sugar sifted
  • ½ cup butter
Chocolate Chess Batter
  • 1 ½ cups sugar
  • 3 Tablespoons cocoa sifted
  • teaspoon salt
  • 2 Tablespoons butter melted
  • 2 eggs at room temperature
  • cup evaporated milk
  • 1 teaspoon vanilla extract

Method
 

Crust
  1. Preheat oven to 350°.      
  2. Combine flour and powdered sugar, cut in ½ cup butter with pastry blender until mixture resembles coarse crumbs.
  3. Press mixture evenly into the bottom of a 9" square pan lined with parchment paper.
  4. Bake at 350° for 15 minutes or until lightly browned.
Chocolate Chess Batter
  1. Combine sugar, cocoa, and salt.         
  2. Add 2 Tablespoons butter and eggs.
  3. Beat for 3 minutes with an electric mixer.
  4. Add evaporated milk and vanilla, mixing well.
  5. Pour mixture over crust and bake at 350° for 45 minutes or until set.
  6. Cut into squares while warm.
