Carrie's Eggs

This is one of my mom's egg casseroles and you might cringe at the sight of cottage cheese in this recipe but I promise nobody will ever know it is in there.  This dish takes minutes to prepare and can be baking while you are opening your packages on Christmas morning!

Ingredients Method

Ingredients
  

  • 10 large eggs
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 1 pint cottage cheese
  • 1 ½ lbs. Monterey Jack cheese shredded
  • ½ cup unsalted butter melted
  • 1 14oz. can diced green chilies
  • 1 cup cooked sliced sausage or diced ham

Method
 

  1. Preheat oven to 350°.
  2. Whisk eggs until frothy.
  3. Add remaining ingredients and mix well.
  4. Pour into a 13" x 9" pan coated with cooking spray.
  5. Bake at 350° for 30-35 minutes. Let cool for 10 minutes before serving.
