Butter Cookies

This was my grandmother's recipe and I would get so excited around the holidays to make these cookies that are oh, so easy to pop in your mouth!  I use raspberry jam to fill the center.
Plan Ahead Note: the butter needs to be softened to room temperature and the dough needs to chill for one hour.
Servings: 4 dozen cookies
Course: Christmas

Ingredients
  

  • ¾ cup powdered sugar
  • 1 cup butter softened
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • jam

Method
 

  1. Cream sugar and butter in an electric mixer until light and fluffy.       
  2. Blend in flour and vanilla just until combined.
  3. Cover and chill for 1 hour.
  4. Preheat the oven to 350°.
  5. Roll chilled dough into balls the size of a walnut and place on an ungreased cookie sheet.  
  6. Use the back of a ¼ teaspoon and make a dent in the center of each ball.  Fill with ¼ teaspoon of jam.
  7. Bake at 350° for 12 minutes.  Let cool on cookie sheet for 5 minutes then move to a wire rack to cool completely.
