Bean-A-Mole

This has the consistency of Guacamole, but it is made with pinto beans and can be assembled very quickly!
Servings: 2.5 cups
Course: Appetizer

Ingredients
  

  • 2 15oz. cans pinto beans drained
  • 1 4oz. can diced green chilies
  • 2 Tablespoons olive oil
  • 1 Tablespoon lime juice
  • 2 garlic cloves minced
  • ½ teaspoon salt
  • ½ teaspoon chili powder
  • ¼ teaspoon ground cumin
  • tortilla chips

Method
 

  1. In a food processor, combine all ingredients except for tortilla chips.    
  2. Mix until well blended but beans still have some texture.
  3. Cover and refrigerate until ready to serve.
