Baked Gruyere and Sausage Omelet

While this is great for breakfast, I frequently serve it for dinner with toast and cut fruit.
Course: Breakfast

Ingredients
  

  • 2 Tablespoons olive oil
  • 1 small onion diced
  • ½ lb. mild turkey sausage casings removed
  • 8 eggs
  • cup milk
  • 1 teaspoon kosher salt
  • 1 ½ cups grated Gruyere cheese

Method
 

  1. Preheat oven to 425°.           
  2. Lightly butter an  8" x 8" baking dish.
  3. Heat the oil in a medium skillet over medium-high heat.  Add the onion and cook until translucent, about 3 minutes.
  4. Add the sausage and cook until brown, about 5 minutes.  Set the pan aside to cool.
  5.  In a large bowl, whisk together the eggs, milk, salt, and pepper, to taste, until smooth, about 20 seconds.
  6. Add 1 cup of Gruyere cheese.
  7. Stir in the onions and sausage.
  8. Pour the batter into the prepared pan.  Sprinkle with the remaining cheese.
  9.  Bake for 20-25 minutes or until golden brown.  Let cool for 5 minutes before serving.
