Applesauce Bread

The use of applesauce in this recipe makes the bread so moist and it is a perfect addition for your Thanksgiving morning table. I use the natural version of applesauce.
Plan Ahead Note: The butter and the eggs need to be brought to room temperature.

Ingredients
  

  • 1 cup quick cooking oats
  • 1 ⅔ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup butter softened to room temperature
  • ¾ cup granulated sugar
  • 2 large eggs brought to room temperature
  • 1 cup applesauce
  • 1 teaspoon granulated sugar
  • ¼ teaspoon ground cinnamon

Method
 

  1. Preheat oven to 350°.
  2. Lightly grease a 9" x 5" x 3" pan.
  3. In a mixing bowl stir together the oats, flour, baking soda, cinnamon, salt, and baking powder.
  4. In another mixing bowl, cream butter and ¾ cup sugar until light and fluffy.
  5. Add eggs one at a time, beating well after each addition.
  6. Add oat mixture and applesauce alternately with the creamed butter mixture, beating until smooth after each addition.
  7. Pour batter into prepared pan.
  8. Combine remaining sugar and cinnamon and sprinkle on top of the batter.
  9. Bake at 350° for 45 minutes or until wooden pick inserted into the center of the bread comes out clean.
  10. Cool in pan for 10 minutes.
  11. Remove from pan and cool completely on a wire rack.
  12. Store tightly wrapped for up to three days. This bread also freezes well.
