Roasted Asparagus with Balsamic Browned Butter

This recipe is from Cooking Light and not only is it quick and easy, the Asparagus cooks perfectly.

Ingredients
  

  • 2 lbs. asparagus spears trimmed
  • olive oil
  • ¼ teaspoon kosher salt
  • teaspoon black pepper
  • 2 Tablespoons butter
  • 2 teaspoons soy sauce
  • 1 teaspoon balsamic vinegar
  • grated lemon rind

Instructions
 

  • Preheat oven to 400°.      
  • Arrange asparagus in a single layer on a baking sheet coated with olive oil.  Sprinkle with salt and pepper.
  • Bake at 400° for 12 minutes.
  • Melt butter in a small skillet over medium heat; 3 minutes or until lightly browned, skiing the pan continually.
  • Remove from heat; stir in soy sauce and vinegar.
  • Drizzle over asparagus, tossing to coat.  Garnish with cracked pepper and grated lemon rind.
