Cowboy Cookies
These cookies are great if you want something a little different than just a plain chocolate chip cookie.
Plan Ahead Note
: the butter and eggs need to be brought to room temperature and the dough needs to chill for 20 minutes before baking.

butter
softened

cup
granulated sugar

light brown sugar
firmly packed

eggs
at room temperature

teaspoon
vanilla extract

all-purpose flour

teaspoon
baking soda
½
teaspoon
baking powder
½
teaspoon
salt

cups
uncooked regular oats
1
12 oz. pkg.
semi-sweet chocolate chips
Instructions
Preheat oven to 350°.
Beat butter at medium speed with an electric mixer until creamy.
Gradually add sugars, beating at medium speed until mixture is light and fluffy.
Add eggs, 1 at a time, beating well after each addition.
Beat in vanilla.
Combine flour and next 3 ingredients.
Gradually add flour mixture to sugar mixture, beating at a low speed just until blended.
Stir in oats.
Stir in chocolate chips.
Drop dough using a 1 oz. scoop or 2 Tablespoons onto a parchment-lined baking sheet.
Chill 20 minutes or until firm.
Bake at 350° for 12 minutes, rotating the pan after 6 minutes.
Cool on pan for 2 minutes; transfer to wire racks, and cool.
