Orange-Ginger Muffins
These are great for breakfast or an afternoon snack! For the best flavor use fresh orange juice and orange rind.
- 2 cups all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- ¼ teaspoon ground ginger
- ⅓ cup granulated sugar
- 1 egg beaten
- ⅔ cup milk
- ½ cup fresh orange juice
- ¼ cup canola oil
- 2 teaspoons grated orange rind
Preheat oven to 375°.
Combine flour through sugar in a bowl and mix well.
Combine the egg, milk, orange juice, oil, and orange rind and add to the flour mixture, stirring just until moistened.
Spoon batter into greased muffin tins, filling half full.
Bake at 375° for 15 minutes or until light golden brown and a wooden pick inserted into the center of a muffin comes out clean. Cool in pans for 5 minutes and then remove to a wire rack to cool completely.
