You can lightly mash the potatoes and the sauce is slightly sweet, making it very kid friendly. Use two large spatulas to lift the meatloaf onto a cutting board to slice it. Add a side salad or steamed green beans to complete the meal. This meatloaf also works well for sandwiches the next day.
Grease the bottom of the slow cooker with olive oil. Add the potatoes, toss lightly to coat and arrange in a neat bed. Shape the mixture into an oval or round loaf , and place on top of the layer of potatoes.
Combine the ground beef, eggs, crumbs, ketchup, salt, and pepper in a large bowl.
Using a large fork, mix gently but thoroughly, being careful not to compact the meat.

To make the topping, combine the ingredients in a small bowl and pour over the meatloaf.
Cook on low for 8 hours.
Remove meatloaf and let rest for 10 minutes before slicing. Serve with potatoes mashed from the slow cooker.
