Double Chocolate Cake

This makes a wonderfully moist chocolate cake. Use miniature loaf pans for fun Valentine gifts.
Plan Ahead Note: the butter needs to be softened to room temperature.

Ingredients
  

  • 1 ⅔ cups all-purpose flour
  • cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter softened to room temperature
  • 1 cup granulated sugar
  • 2 eggs
  • 1 cup buttermilk
  • mini semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350°.
  • In a medium mixing bowl, combine flour, sifted cocoa powder, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl beat the butter with an electric mixer on medium speed for 30 seconds.
  • Add sugar, beat until fluffy. Add eggs, beating until well combined.
  • Add the flour mixture and buttermilk alternately to egg mixture, beating after each addition just until combined.
  • Spoon half of batter in miniature loaf pans then sprinkle with the mini chocolate chips.
  • Top each loaf pan with remaining batter and smooth evenly.
  • Bake for 35-45 minutes depending on the size of your loaf pans, or until wooden pick inserted into the center comes out clean. Cool completely before slicing.
