Preheat oven to 375°.
To shape the cookies: Break off about 1 Tablespoon of the dough, make an indentation in the center with your fingers, press one of the peanut butter balls into the indentation.
Bring the dough up and over the filling, pressing it closed; roll the cookie in the palms of your hand to smooth it out.
Dip the top of each cookie in granulated sugar and place on the prepared baking sheets 2 inches apart.
Dip the bottom of a small drinking in the granulated sugar and gently press a cookie down to flatten, about a half inch thick. Repeat with the other cookies.
Bake at 375° for 7-9 minutes. Remove from oven and cool on a wire rack.
