Spice Cookies
Plan Ahead Note: the butter needs to be softened to room temperature and the dough needs to be refrigerated for one hour.
- ¾ cup butter softened
- 1 cup light brown sugar firmly packed
- 1 egg
- ¼ cup molasses
- 2 ¼ cups all-purpose flour
- 2 teaspoons baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground cloves
- ½ cup granulated sugar
Preheat oven to 350°.
Mix butter and brown sugar at medium speed of an electric mixer until creamy.
Add brown sugar, mixing well.
Add egg and molasses.
Combine flour through cloves and slowly add to dough, mixing until soft dough forms.
Roll onto plastic wrap, wrap tightly and refrigerate for one hour.
Roll dough into balls and roll into sugar to coat.
Place on a silicone mat or parchment paper on a cookie sheet and bake at 350° for 10-15 minutes or until cookies begin to crack.
Move to a wire rack and cool completely.
